Flavored oils are a staple in many professional kitchens. They have the ability to elevate vinaigrettes, marinades, or even crudite platters. For the confit wild garlic, smear it on toast or in vinaigrettes and marinades as well. This simple recipe results in ingredients that are a great addition to any home kitchen arsenal!
Ingredients
Desired amount of wild garlic (bulbs and lower half of stalks)
Grapeseed oil or EVOO (enough to cover)
Method
Preheat the oven to 350 F.
Place wild garlic into a small oven safe pot. Pour in enough oil just to cover the garlic. *The lower half of the stalks and the bulbs are the most tender. The higher you go one the stalk, the more fibrous and harder to chew.
Place the pot in the oven for 45- 60 min until the garlic is soft and smearable.
Remove from the oven and allow to cool. Separate the oil and the wild garlic.
