Wild Garlic Roasted Sweet Potatoes

Sweet Potatoes are extremely versatile. Mashed or whole, sweet or savory, there are a lot of options as to how you can cook this tuber. The following is a simple recipe to make garlicky and herbaceous roasted sweet potatoes - with an opportunity to put that wild garlic oil into action!


  • 2 sweet potatoes, washed and sliced into discs (¾ inch width)

  • 2 Tbsps of wild garlic oil (or EVOO if you don’t have any garlic oil on hand)

  • 2 cloves of minced garlic

  • 2 Tbsps of butter, melted

  • 1 Tbsp of honey

  • 2 sprigs of thyme, leaves removed and chopped

  • 2 sprigs of rosemary, leaves removed and chopped

  • Salt to taste

  • Black Pepper to taste


  1. Preheat the oven to 400 F.

  2. In a large bowl, mix all of the ingredients together, gently massaging all the ingredients into the sweet potatoes.

  3. Lightly oil a 10” cast iron skillet or oven safe baking pan. Arrange the discs of sweet potato into a spiral.

  4. Place the skillet/pan in the oven for 35-45 minutes or until the sweet potatoes are tender and golden brown.

*Finish with fresh herbs and freshly grated hard cheese like Pecorino or Parmigiano.
